Fresh and crispy spring rolls packed with vegetables, vermicelli noodles, and herbs. A healthy and light dish perfect for any occasion.
Prepare the vermicelli noodles by boiling them according to package instructions. Drain and set aside.
Cut the carrot, cucumber, and avocado into thin strips.
Dip the rice paper into warm water for 5-10 seconds to soften. Lay it flat on a clean surface.
Place a lettuce leaf in the center, then layer a few strips of carrot, cucumber, avocado, vermicelli noodles, and fresh mint leaves.
Roll the rice paper tightly, folding in the sides as you go.
Repeat with the remaining ingredients.
For the dipping sauce, mix hoisin sauce and peanut butter in a small bowl, adding a little water if needed to reach a smooth consistency.
Serve the spring rolls with the dipping sauce on the side.
