Finely chop mushrooms and shallots, sauté until moisture evaporates.
Season ground beef with salt and pepper, form into 12 small patties.
Sear beef patties quickly on high heat, then cool.
Spread each patty with Dijon mustard.
Roll out puff pastry and cut into 12 squares.
Place prosciutto slice, mushroom mixture, and beef patty on each pastry square.
Fold pastry over filling and seal edges.
